Making soup just so easy,Anybody can make soup.chicken soup is one of my favor soup,it is not thick,light but healthy,adding some vegetables make a bit of different.
3or4 Free range corn feed chicken thigh and drum (whole free range corn feed chicken is better)
4 corn on cob
2 garlic clove
2 spring onion
2tsp olive oil
1 branch thyme
3or 4 sliced ginger (peeled)
chop some coriander for garnish.
1.chop the spring onion and ginger finely,peel the carrot and chop them as well.
2.put chicken thigh and drum into a container,meanwhile,boil some water and pour into the container,wash the blood of chicken away,so you can get the soup clearly and well look.
3.heat a pot,add 2tsp olive oil,when the oil is hot ,fry the spring onion,ginger and garlic off and wait the color turn golden smell come out,adding the chicken thigh and drum in,stir a bit,crash half lemon juicy into and adding chopped carrot and water.the water cover the chicken a bit.
4.when the water boil,add into thyme and garlic.turn low the heat,simmer about 2 hours
5.taste and seasoning,sprinkle fine chopped coriander for garnish..
service with bread or rice
