Poach is a simple but healthy cooking method.
- 2 skinless chicken breasts
- 1 onion, fine chopped
- 1 carrot, peeled and sliced
- 1 stick celery, roughly chopped
- 1 bay leaf
- 2 stick thyme
- 3 black peppercorns,crash them.
- 15g butter
- 15g flour
- 150ml white wine
- 1 free-range egg yolk
- 2-3 tbsp double cream
- salt and freshly ground black pepper
- squeeze lemon juice
- 2 tbsp chopped fresh parsley for garnish
- mashed potatoes
1.Put the chicken breast into a large pan with water,add fine chopped onion,carrot and bay leaf,thyme and cover.
2.Slowly to boil them and simmer about 30mins.
3.Check the chicken are already cooked( they must be cooked),take them away and keep them warm.
4.Strain the cooking liquid into a bowl, reserving about 400ml for sauce
5.Melt butter in a sauce pan,add flour and white wine stirring well for roux,add the reserving liquid in slowly,stirring constantly to make a thick sauce.
6.Place the egg yolk and the cream into a clean bowl and whisk them together and add the egg mixture into the sauce,stir well.
7.Add the chicken breast into sauce.Remove from the heat and season them for serving.
